Banana Bread Muffins


Something has to be first.... Bananas are always on the edge.

What's more, this recipe is easy and delicious.  I like mine with cream cheese.



1 cup brown sugar
1/2 cup butter, room temperature
3 large eggs
2 large bananas or 3 small bananas (on the edge and squashed a bit)
2 cups unbleached flour (or 1 and 1/2 cups flour and 2/3 cup oatmeal)
1/2 teaspoon salt
1 teaspoon baking soda
1/2 cup dried cranberries (or golden raisins)
1/2 cup nuts (optional)







Preheat oven to 325 degrees
Line muffin tin with paper liners (makes 12)
Cream butter and sugar in large bowl of stand-up mixer
Add bananas and mix in briefly
Combine flour (flour/oatmeal), salt, and baking soda
Add dry ingredients to the mixture half at a time; allow to mix
With a spatula, mix in cranberries or raisins
Fill 1/4 c scoop level and drop into muffin cups.
Bake muffins for 25 to 30 minutes until golden and toothpick comes out clean. 
Cool on rack and enjoy.
